Spring Pea Salad

This spring asparagus and sugar snap pea salad is all about keeping things simple. Sweet sugar snaps, crisp asparagus, and peppery radish come together for something fresh, colourful, and full of flavour. It's light, vibrant, and a celebration of simple seasonal ingredients.
 

Ingredients:

  • 2 cloves garlic minced
  • 1 tsp kosher salt
  • 1 shallot minced 
  • ½ tsp freshly ground black pepper
  • 3 tbsp fresh lemon juice
  • 2 tbsp white wine vinegar
  • 2 tbsp Dijon mustard (optional) 
  • 6 tbsp olive oil
  • 1 lb asparagus
  • 1 lb sugar peas
  • 1 lb radish
  • Feta Cheese
  • ½ cup minced fresh dill
  • ½ cup chopped fresh parsley

Instructions:

 

  1. Cut sugar snap peas and raw asparagus on a thin bias, as well as the radishes.
  2. Whisk together or shake in a jar all of the lemon shallot dressing ingredients and set aside.
  3. To a large bowl or platter add sliced asparagus, sliced snap peas, sliced radishes, feta cheese, and herbs. Drizzle with the dressing and toss and enjoy!

Tip: Green castelvetrano olives are a great addition!
