Potato Salad

This vegan potato salad is simple in the best way. Loosely inspired by a classic German vinegar potato salad, it’s tangy, herby, and full of flavour. The shallots and fresh herbs really do all the heavy lifting here, turning a few humble ingredients into something fresh and comforting.

Ingredients:

  • 4-6 small potatoes
  • Olive oil
  • Vinegar 
  • 1 small shallot chopped
  • Parsley or oregano chopped 
  • Salt and Pepper

Instructions:

  1. Boil the potatoes skins on in salted water until tender.
  2. Thinly slice shallots and let them sit in a hot water bath to remove some bite. Drain after a few minutes.
  3. Once potatoes are tender and slightly cooled, slice or crush at random. 
  4. Combine the oil and vinegar to taste and add the potatoes and herbs. 
  5. Season with salt and pepper, toss and serve!

Tip: We also love adding mustard to this dish, 2 teaspoons should be all you need!
