Who says oatmeal has to be sweet? This savory version is a hearty, comforting way to start your day, loaded with flavor and topped with a perfectly poached egg. The combination of cheddar, salsa, and fresh herbs adds a delicious twist to your usual oatmeal routine.

Ingredients:
- 1/2 cup rolled oats
- 1 cup water or broth (for extra flavor)
- 1/4 cup shredded cheddar cheese
- 1 egg (poached)
- 2 slices of bacon, cooked and crumbled (optional)
- 2 tablespoons salsa
- 1 green onion, chopped
- A handful of pea shoots
- Fresh cilantro, roughly chopped
- Salt and pepper to taste
- Tuff City Hot Sauce to taste

Cook the oats: In a small pot, bring water or broth to a boil. Stir in the oats and reduce heat. Let simmer, stirring occasionally, until the oats are soft and creamy (about 5-7 minutes). Add salt and pepper to taste.

Prepare the toppings: While the oats are cooking, poach your egg by bringing a small pot of water to a simmer. Crack the egg into a small bowl, then gently slide it into the water. Cook for about 3-4 minutes, until the white is set but the yolk is still runny. Remove with a slotted spoon and set aside.

Assemble the bowl: Transfer the cooked oats to a bowl and stir in the cheddar cheese. Add the egg, bacon and salsa.
