Cranberry Walnut Granola

This homemade granola is a delightful mix of crunchy oats, toasted walnuts, and chewy dried cranberries, sweetened with a touch of maple syrup. It’s perfect for topping yogurt, enjoying with milk, or snacking on its own!

Ingredients:

  • 3 cups rolled oats
  • 1 cup walnuts, roughly chopped
  • 1/2 cup dried cranberries
  • 1/3 cup coconut flakes (optional)
  • 1/3 cup maple syrup
  • 1/4 cup coconut oil (or olive oil)
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon sea salt

Instructions:

  1. Preheat the oven to 325°F (160°C) and line a baking sheet with parchment paper.

  2. Mix the dry ingredients: In a large bowl, combine the rolled oats, chopped walnuts, cinnamon, and sea salt. Stir to evenly distribute the ingredients.

  3. Add wet ingredients: In a small saucepan over low heat, melt the coconut oil (or olive oil) and maple syrup together. Stir in the vanilla extract. Once melted and combined, pour the mixture over the dry ingredients and mix thoroughly to coat everything.

  4. Spread on the baking sheet: Evenly spread the oat mixture onto the prepared baking sheet in a thin layer.

  5. Bake the granola: Bake for 25-30 minutes, stirring halfway through to ensure the granola toasts evenly. Keep an eye on it in the last few minutes to avoid burning. The granola is done when it turns golden brown.

  6. Add cranberries and coconut: After removing the granola from the oven, stir in the dried cranberries and coconut flakes (if using). The granola will continue to crisp up as it cools.

  7. Cool and store: Allow the granola to cool completely on the baking sheet. Once cooled, transfer it to an airtight container.
