Ingredients:
- 1/3 cup oats
- 2 tablespoons chia seeds
- 1/2 cup plain Greek yogurt
- 1 cup coconut milk (full-fat for extra creaminess)
- 1 tablespoon maple syrup
- 1 tablespoon fresh lime juice
- 1 teaspoon lime zest
- 1 teaspoon vanilla extract
- Optional: 1 tablespoon vanilla protein powder
- For topping: Crushed graham crackers, coconut ribbons, & more lime zest (optional)

Combine oats, chia seeds, and coconut milk in a bowl or jar. Stir well so that the chia seeds are evenly dispersed and the oats are fully soaked.

Mix in the Greek yogurt, maple syrup, lime juice, lime zest, and vanilla extract (and protein powder if using). Stir everything until smooth and well-combined.
