Kale gives the classic Caesar a fresh, hearty upgrade—swapping out lighter lettuces for something with real texture and depth. Paired with a creamy Greek yogurt dressing, it keeps all the richness you love while feeling lighter and more nourishing, with an extra boost of protein and wholesome goodness.
Ingredients:
- 1lb of fresh Kale
- 2 tbsp mayo
- 2 tbsp plain yogurt (Greek is ideal)
- 1–2 tsp anchovy paste
- 1 small garlic clove, finely grated
- 2–3 tbsp finely grated Parmesan
- 2 tbsp fresh lemon juice
- 3 tbsp olive oil
- Salt + freshly cracked pepper
- 1 tsp Dijon mustard
Instructions:
- Remove kale stems, clean, and chop or rip into bite sized pieces. Add a drizzle of olive oil and salt and massage greens for 1-2 minutes. It should soften and slightly darken (this will make it less bitter).
- Mix dressing ingredients in a jar and shake, and add to massaged kale.
- Top with extra Parmesan and panko breadcrumbs!
Tip: This salad is actually better after it sits for awhile, so no pressure if you want to make it slightly ahead of time.
