A TUCG member and dear friend brought this delicious dish to a dinner party, and after a few bites we knew it had to be shared. It’s easy, elegant, and perfect for entertaining, but simple enough to make any weeknight feel special.
Ingredients:
- 2-3 leeks
- Salt and pepper
- Olive oil (for drizzling)
- 1/2 cup of Ricotta (could be subbed for goat cheese, Mascarpone, cream cheese or blended cottage cheese)
- Maple syrup (you could go in any direction with this whipped ricotta, make it sweet or savoury!)
Instructions:
- Prepare the leeks by cutting the dark tops and root bottoms. Slice in half and rinse the leeks thoroughly under cold water, separating the layers to make sure the nooks are all clean. Pat dry.
- Arrange leeks on a baking sheet and drizzle with olive oil and sprinkle with salt and pepper.
- Bake at 350 for 20-25 minutes. They will be ready once fork tender.
- Whip your ricotta with Maple Syrup or spice of choice.
- Spread ricotta on your serving dish, and arrange your leeks on top.
- Scoop the ricotta up with your leek frond and enjoy!!
