This time of year, a lot of us crave something warm and hearty. Beef Bourguignon—aka Julia Child’s classic—is the ultimate comfort food! It’s really not that hard to make; it just takes some time and good ingredients to get that rich, satisfying flavour, Impress your family or your house guests with this delicious meal.
Ingredients:
- 3lbs of brisket (trimmed of fat and roughly chopped)
- 4-5 slices of thick cut bacon
- 1 carrot
- 1 white onion
- 6 cloves of garlic
- 2 tablespoons flour
- 12 pearl onions or 6 shallots
- 3 cups of pinot noir
- 2-3 cups of beef stock
- 1 beef bouillon cube
- 1 tsp fresh thyme
- 2 tbsp fresh parsley
- 2 tbsp tomato paste
- 2 bay leaves
- 2 tbsp butter
- Salt and pepper
- olive oil
Instructions:
- Preheat oven to 350
- In a large dutch oven heat a few tbsp of olive oil and sautee bacon until done, set aside.
- Pat beef dry and sear in dutch oven until all sides are brown. Set aside with bacon once done.
- Sautee onion and carrot until soft, then add all cloves of minced garlic. Drain excess fat but leave a little. return meat and season 1/2 tsp salt and pepper. Sprinkle in flour, ross and cook for 4-5 minutes.
- Add pearl onions or shallots, wine and stock until everything is barley just covered. Add tomato paste, bouillion cube, and herbs and bring to a simmer.
- Once simmered cook 2-3 hours in the oven until tender.
- Option to remove meat and veggies and cook the liquid down until nice and thick, add butter!
- Top with chopped parsley
- Serve over mashed potatoes, and enjoy!
Tip: Try adding mushroom's to bulk it up!
