A mother’s mac and cheese is truly the key to the heart. Every family has their own take on this classic, but here’s a recipe from a mother of four, made with years of feeding hungry kids and bringing everyone to the table. It’s nostalgic, creamy, and just the right amount of crispy.
Ingredients:
- 1 1/2 cups Macaroni
- 4 tbsp butter
- 4 tbsp all purpose flour
- 2 cups of milk
- 1 1/2 cups of grated old cheddar cheese
- 1/2 -1 tsp kosher salt
- 1/2 tsp pepper
- 1/4 tsp dry mustard powder
- 1/2 - 1 cup of fresh bread crumbs or panko
- 2 tbs butter for topping
Instructions:
- Cook macaroni according to the package directions. (make sure to add salt to the water while boiling!)
- Melt butter, add flour and stir until bubbling. Gradually add milk and stir constantly until smooth and thickened. Remove from heat, add cheese and stir until melted.
- Add spices to your cheese mixture, (adjust salt if needs more).
- Drain pasta and and pour in a 9x9 or 8x8 pan. pour sauce over and gently stir until noodles are coated.
- To make the topping, mix crumbs with melted butter and sprinkle over top.
- Bake at 375 for 25-30 minutes until bubbling. Broil for the last few minutes until crumbs are browned!
Tip: Serve with roasted veggies on the side or sausages!
