This quiche recipe is a great way to make use of leftovers! You can also use deli ham if you'd like. The recipe is for a basic ham and cheese quiche, but feel free to get creative—try a different type of cheese or toss in some sautéed spinach.
Ingredients:
- 1 pre-made pie crust (or homemade, if you prefer)
- 1/2 cup cooked ham, diced (or 200g deli ham, chipped into small squares)
- 1 cup sharp cheddar cheese, shredded
- 6 large eggs
- 1/4 cup sour cream (or greek yogurt)
- 1/4 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp smoked paprika (optional)
Instructions:
- Preheat your oven to 375°F. Roll out the pie crust into a 9-inch pie dish and crimp the edges. Make holes in the base of the crust using a fork to help it cook evenly.
- Preheat your crust until the edges are just slightly golden (approximately 10-12 minutes for premade pie dough).
- In a mixing bowl, whisk together the eggs, sour cream, salt, pepper, and smoked paprika. Pour the mixture in the crust.
- Spread the diced ham and shredded cheddar evenly around the quiche.
- Bake until the quiche is set in the centre and lightly golden, this could take up to 40 minutes.
- Let cool for 5-10 minutes before slicing. Garnish with green onions if desired. Serve warm or at room temperature.
