Ingredients:
- 1 lb carrots, peeled and halved lengthwise
- 1 tbsp olive oil
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp cumin (optional)
- 1/2 cup feta cheese
- 1/4 cup plain Greek yogurt
- 1 tbsp olive oil (for whipped feta)
- 1 tsp lemon juice
- 1 tbsp honey
- Fresh parsley or dill, chopped (for garnish)
Instructions:
- Preheat your oven to 400°F (200°C). Toss the carrots with olive oil, salt, pepper, and cumin, if using. Spread them on a baking sheet in a single layer.
- Roast for 20-25 minutes, turning halfway through, until the carrots are tender and caramelized.
- While the carrots are roasting, combine the feta cheese, Greek yogurt, olive oil, and lemon juice in a food processor or blender. Blend until smooth and creamy.
- Spread the whipped feta on a serving platter and arrange the roasted carrots on top. Drizzle with honey and sprinkle with fresh herbs.
- Serve warm as a side dish or appetizer.
Note: You can make this dish vegan friendly by using our vegan cheese or make whipped tofu instead of feta & yogurt
