Fresh Pepper Paste

Ingredients:

  • 2 cups mixed peppers (sweet, banana, bell, jalepenos, hot)
  • 3 cloves of garlic
  • 1/4 cup olive oil
  • 1 tablespoon lemon or lime juice
  • 1 teaspoon of salt  

Instructions:

 

  1. Roast the peppers if you have a grill or broiler, char the peppers until their skins are blackened, then let them cool before peeling the skin. (if your avoiding the charred flavour, simply chop fresh.)
  2. In a blender of food processor, combine the peppers, garlic, olive oil, lemon juice, and salt until smooth.
  3. Taste and adjust for seasoning if necessary. Want a spicer kick? Throw in a couple more hot ones!

Tip: Perfect for pizzas, sandwiches, or as a marinade!
