In the wise words of Anthony Bourdain, "Good food is very often, even most often, simple food." When you have quality ingredients, even the simplest dishes can evoke powerful emotions. A Roasted Tomato and Burrata Salad is the perfect example of that.
Ingredients:
- 3 cups of Cherry tomatoes (mixed colours are great and on the vine is even better!)
- 3 tbsp extra virgin olive oil (plus more for drizzling)
- 3 cloves of garlic, smashed
- 1/2 tsp sea salt
- 1/4 tsp freshly ground black pepper
- 1 ball fresh burrata cheese
- 2 tbsp fresh basil leaves torn or sliced thin
- 1 tsp balsamic glaze or aged balsamic vinegar (optional)
- 1 tbsp of pesto (optional)
Instructions:
- Preheat the oven to 40°F
- Place the cherry tomatoes on a baking dish, keep some on the vine if you'd like. Add smashed garlic cloves and drizzle with 3tbsp olive oil. Season with Salt and pepper and toss gently
- Roast for 20-25 minutes until the tomatoes are blistered, soft, and start releasing juices.
- Once roasted, transfer tomatoes and juices onto a large shallow bowl or platter.
- Gently tear the burrata into chunks and place over the warm tomatoes.
- Sprinkle with fresh basil and drizzle a little olive oil and a pinch of salt.
- Option to add a little pesto or balsamic on top!
Tip: Serve warm with crusty bread or crackers!
