In the wise words of Anthony Bourdain, "Good food is very often, even most often, simple food." When you have quality ingredients, even the simplest dishes can evoke powerful emotions. A Roasted Tomato and Burrata Salad is the perfect example of that.

Ingredients:

  • 3 cups of Cherry tomatoes (mixed colours are great and on the vine is even better!)
  • 3 tbsp extra virgin olive oil (plus more for drizzling)
  • 3 cloves of garlic, smashed
  • 1/2 tsp sea salt
  • 1/4 tsp freshly ground black pepper
  • 1 ball fresh burrata cheese
  • 2 tbsp fresh basil leaves torn or sliced thin
  • 1 tsp balsamic glaze or aged balsamic vinegar (optional)
  • 1 tbsp of pesto (optional)

Instructions:

  1. Preheat the oven to 40°F
  2. Place the cherry tomatoes on a baking dish, keep some on the vine if you'd like. Add smashed garlic cloves and drizzle with 3tbsp olive oil. Season with Salt and pepper and toss gently
  3. Roast for 20-25 minutes until the tomatoes are blistered, soft, and start releasing juices.
  4. Once roasted, transfer tomatoes and juices onto a large shallow bowl or platter.
  5. Gently tear the burrata into chunks and place over the warm tomatoes.
  6. Sprinkle with fresh basil and drizzle a little olive oil and a pinch of salt.
  7. Option to add a little pesto or balsamic on top!

Tip: Serve warm with crusty bread or crackers!
