Cocofino Tzatziki

Cucumbers are a staple summer snack for us at TUCG straight up or in our favourite recipes. This Cocofino Tzatziki was made by our in-house chef Lise for our team and we just had to share.

We also suggest making this at the same time as our Cucumber Basil Refresher to use up reserved cucumber juice. Makes for a the ideal hydrating summer beverage.


Ingredients:

  • 1 long english cucumber
  • 2 green onions or shallots, finely diced
  • 1 lemon – juice and zest
  • Fresh herbs (1/2 bunch, fresh dill, 3-4 leaves fresh mint, chopped)
  • 1 clove, garlic, minced
  • 1-3/4 cups Cocofino plain yogurt (sub: plain Promise Valley Yogurt)
  • Salt and pepper
  • Olive oil for drizzle 

Instructions:

  • De-seed and grate cucumber. Squeeze out excess liquid and leave in a strainer over a bowl to drip. Save cucumber water for drinks!
  • Stir together and leave for 1 hour in the fridge
  • Drizzle with olive oil
  • Serve with pita bread, crackers, curry, or with salads!
