Save the cucumber water from your tzatiki and make this refreshing summer drink!
Ingredients:
- 1-1/2 cups of reserved cucumber liquid
- 2 tsp lemon zest
- 1/2 lemon juice
- 1 tsp zested ginger
- 3 leaves basil, thinly sliced
- 1/4 cup of cane sugar and 1/4 cup of water for simple syrup
- 4 cups cold water
- Sliced cucumber and basil leaves for garnish
Instructions:
- Make simple syrup ahead of time with 1/4 cup cane sugar and 1/4 cup of water by heating until sugar dissolves. Remove from heat and let cool,
- Combine all ingredients and blast in a blender or with an immersion blender.
- Serve over ice and garnish with slices of cucumber and basil leaves.
Tip: If you don't have time to make the simple syrup, just use 1/4 cup of cane sugar as is!
