This recipe is the perfect vegan alternative to creamy cheeses - use it as a substitute for cream cheese or ricotta, or enjoy as a delicious dip!
Ingredients:
- 1 block (200g) firm tofu, pressed and drained
- 2 tbsp olive oil
- 2 tbsp lemon juice
- 1 clove garlic, minced
- 1/4 cup fresh herbs (parsley, dill, or chives)
- 1 tsp maple syrup or honey (optional, for sweetness)
- 1/4 tsp salt (or to taste)
- 1-2 tbsp water (to adjust texture, if needed)
Instructions:
- Add the pressed tofu, olive oil, lemon juice, garlic, fresh herbs, maple syrup, and salt to a food processor or blender. Blend until smooth, adding water 1 tablespoon at a time to reach your desired creamy consistency.
- Spread the whipped tofu on a serving platter. Drizzle with a bit of olive oil or honey, if desired, and sprinkle with more fresh herbs for garnish.
- Serve warm as a side dish or appetizer.
