Whipped Tofu

This recipe is the perfect vegan alternative to creamy cheeses - use it as a substitute for cream cheese or ricotta, or enjoy as a delicious dip!

Ingredients:

  • 1 block (200g) firm tofu, pressed and drained
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 clove garlic, minced
  • 1/4 cup fresh herbs (parsley, dill, or chives)
  • 1 tsp maple syrup or honey (optional, for sweetness)
  • 1/4 tsp salt (or to taste)
  • 1-2 tbsp water (to adjust texture, if needed)

Instructions:

  1. Add the pressed tofu, olive oil, lemon juice, garlic, fresh herbs, maple syrup, and salt to a food processor or blender. Blend until smooth, adding water 1 tablespoon at a time to reach your desired creamy consistency.
  2. Spread the whipped tofu on a serving platter. Drizzle with a bit of olive oil or honey, if desired, and sprinkle with more fresh herbs for garnish.
  3. Serve warm as a side dish or appetizer.
