Versatile Blueberry Compote

Serve this richly flavoured compote in matchas, over ice cream or whatever else your heart desires! 

Ingredients: 

  • 2 cups of fresh blueberries
  • 1/4 cup of sugar 
  • Finely grated zest of one lemon
  • 2 tablespoons of lemon juice 
  • 1/4 tsp of ground cinnamon
  • 1/2 tbsp vanilla extract 
  • 1 teaspoon of corn starch
  • 1 tablespoon of cold water

Instructions:

  1. Bring berries, sugar, lemon zest and juice, cinnamon and vanilla to a boil over medium-high heat, then reduce the heat and simmer. The berries should have released their juices and the mixture will look soupy. About 5 minutes
  2. In a separate bowl make a slurry mixture of the cornstarch and water
  3. stir the mixture into the blueberries and simmer until the sauce thickens, about 1 minute. Let cool and keep refrigerated. Serve warm or cold!
