Serve this richly flavoured compote in matchas, over ice cream or whatever else your heart desires!
Ingredients:
- 2 cups of fresh blueberries
- 1/4 cup of sugar
- Finely grated zest of one lemon
- 2 tablespoons of lemon juice
- 1/4 tsp of ground cinnamon
- 1/2 tbsp vanilla extract
- 1 teaspoon of corn starch
- 1 tablespoon of cold water
Instructions:
- Bring berries, sugar, lemon zest and juice, cinnamon and vanilla to a boil over medium-high heat, then reduce the heat and simmer. The berries should have released their juices and the mixture will look soupy. About 5 minutes
- In a separate bowl make a slurry mixture of the cornstarch and water
- stir the mixture into the blueberries and simmer until the sauce thickens, about 1 minute. Let cool and keep refrigerated. Serve warm or cold!
