Tomato Confit

An excellent way to use up some tomatoes if you’ve let them get a little soft on your counter! Slow-roasting brings out their natural sweetness, creating rich, jammy tomatoes infused with garlic, herbs, and olive oil. Perfect spooned over toast, tossed through pasta, or layered onto anything that could use a little decadent hit of deliciousness!
 

Ingredients:

  • 1 pint of cherry tomatoes 
  • 2 garlic cloves smashed 
  • 1/4 cup olive oil
  • Little honey 
  • 1 tablespoon of balsamic vinegar 
  • Fresh herbs (rosemary, tarragon, sage, parsley etc) 
  • Salt and Pepper
  • 1 teaspoon of lemon

Instructions:

  1. In a oven safe vessel add  everything besides the lemon, and cook on low in your oven for up to 5 hours, until tomatoes are wrinkled and soft.
  2. Remove the herbs and squeeze in the lemon juice. 
  3. Store covered in the refrigerator! 

Tip: Squish the tomatoes and use in a sandwich!
