This is all about the layer-and-tuck method — a summertime classic when tomatoes are at their freshest and juiciest. We love using colourful heirloom tomatoes, as each variety brings its own unique flavour, creating a beautiful rainbow of colour. Tucked in between each layer are creamy bocconcini and fragrant basil, all nestled together for the perfect bite of summer.
Ingredients:
- 1/2 pint of cherry tomatoes
- 1 container of mini bocconcini
- Fresh basil leaves
- Olive oil
- Salt and pepper
Instructions:
- Arrange the tomatoes, mozzarella, and basil leaves on a platter. Drizzle with olive oil.
- Season to taste with flaky sea salt and freshly ground black pepper. Serve immediately.
Tip: Use a sharp serrated knife for the tomato slicing!
