This is all about the layer-and-tuck method — a summertime classic when tomatoes are at their freshest and juiciest. We love using colourful heirloom tomatoes, as each variety brings its own unique flavour, creating a beautiful rainbow of colour. Tucked in between each layer are creamy bocconcini and fragrant basil, all nestled together for the perfect bite of summer. 
 

Ingredients:

  • 1/2 pint of cherry tomatoes 
  • 1 container of mini bocconcini
  • Fresh basil leaves
  • Olive oil
  • Salt and pepper 

Instructions:

  1. Arrange the tomatoes, mozzarella, and basil leaves on a platter. Drizzle with olive oil.
  2. Season to taste with flaky sea salt and freshly ground black pepper. Serve immediately.

Tip: Use a sharp serrated knife for the tomato slicing!
