Ingredients:
- 1 pound fresh spinach rinsed
- Juice of half a lemon
- 1 onion chopped or 2-3 spring onions chopped
- 2 1/2 tablespoons olive oil plus more for drizzling
- 1-2 tablespoons chopped dill
- 2/3 cups water
- 1/3 cup medium grain rice
- salt & pepper to taste
- Hunk of feta
Instructions:
- In a large pot, wilt the spinach with the lemon juice and 1 teasopon of olive oil. Set aside and drain
- In another pot saute the onion with the rest of olive oil until soft
- Pour in the lemon juice, broth, dried and fresh herbs, salt, pepper, and turmeric. Mix and allow to come to a boil uncovered. Reduce heat to low and cover.
- Cook for 10-15 minutes until the liquids have evaporated and the rice is tender (time may vary depending on the rice your using) Taste and adjust seasoning as desired. Remove rice from heat and allow to sit covered for 10 minutes. Then uncover, add butter, and fluff up before serving.
- Finish with extra lemon juice and feta!
Tip: Goes wonderful with bbq souvlaki or any other mediterranean dishes!
