Quick Pickled Carrots

These quick pickled carrots add a bright, tangy crunch that pairs perfectly with rich, sweet soy-glazed beef. They're super easy to make and only need about 30 minutes to develop their fresh, zippy flavour.
Ingredients:
  • 3-4 carrots
  • Rice wine vinegar 
  • Salt and sugar

Instructions:

  1. Peel your carrots and thinly slice with a mandolin. Cover with equal parts vinegar and water, and sugar and salt. Let sit for a minimum 30 minutes before eating!
