This plum sauce is a perfect balance of sweet and tangy flavours. Plum Sauce is a classic in Chinese cuisine, often used as a savoury dipping sauce or as a glaze to elevate meats and vegetables. Its deep, fruity richness adds complexity to any dish, making it a must-have condiment in your kitchen.

Ingredients:

  • 6-8 prune plums, pitted and chopped
  • 1/2 cup sugar (adjust to taste)
  • 1/4 cup apple cider vinegar
  • 1 tsp ginger (fresh or ground)
  • 1/2 tsp cinnamon
  • 1/4 tsp cloves
  • 1/4 cup water

Instructions:

  1. In a saucepan, combine the chopped plums, sugar, vinegar, and spices.
  2. Add water to help create a bit of liquid.
  3. Simmer over low heat for about 30-40 minutes, stirring occasionally, until the plums break down and the sauce thickens.
  4. Use an immersion blender or regular blender to smooth out the sauce, if desired.
  5. Let cool and store in an airtight jar in the fridge for up to a week.
