Mango Yogurt Popsicles

These super simple popsicles have just two ingredients, mango and yogurt. You can also sub mangos for other sweet fruits such as frozen strawberries.

Ingredients:

  • 2 ripe mangos
  • 3/4 cup of plain or honey yogurt (sub Cocofino for a vegan option)
  • If using plain yogurt, option to add maple syrup for extra sweetness

Instructions:

  • Slice mango close to the pit creating two sides separated from the pit
  • Score mango into cubes cutting down to the skin and turn mango inside out
  • Cut cubes off of mango skin and any extra flesh from the pit
  • Add mango and yogurt to blender and blend
  • Pour mixture to popsicle moulds and freeze for 6 hours

You can also use this recipe to make smoothie ready cubes using an ice cube tray.
