Nothing quite hits the spot like a fruit and nut bar. If you have any nut allergies, sincere apologies in advance! This heavenly combination of crunchy nuts, tart sour cherries, and rich chocolate is surprisingly easy to recreate at home—you just need a little patience. This bar is perfect for gifting during the holidays or simply treating yourself to a delicious, indulgent snack.
Ingredients:
- 1/3 cup cashews (roughly chopped)
- 1/3 cup pistachios (roughly chopped)
- 1.3cup hazelnuts (roughly chopped)
- 1/3 cup dried sour cherries (chopped if large)
- 200g chocolate drops (dark, milk, or white)
- Pinch of salt
- 1/3 cup praline hazelnuts (crushed for topping)
Instructions:
- Toast the nuts if raw in a dry pan for 3-5 minutes until fragrant. Don't walk away from it! It can burn easily so move around the nuts every so often.
- Melt the chocolate drops gently using a double broiler method (heatproof bowl over simmering water) or microwave in short 20 second bursts stirring until smooth.
- Remove melted chocolate from heat and fold in nuts and fruit until well coated.
- Pour the mixture on a parchment lined tray, brownie dish or chocolate mould. Spread evenly and tap on counter to remove air bubbles.
- Sprinkle crushed praline hazelnuts evenly over top and any other extra nuts as topping. Press down slightly so they stick into the chocolate.
- Place in fridge (not freezer, that can bloom the chocolate) for 1-2 hours until fully hard.
- Once firm and chilled, break into irregular pieces or cut into squares.
- Store in a cool dark place and enjoy!
Tip: Add a little shredded coconut on top.... trust us!
