While baked potatoes are easy to make, they do take an hour to bake. Baked potatoes are the ideal low maintenance dish with a very short prep time that you can to set and forget for an hour.
We love to stuff our baked potatoes with butter, sour cream and chives. A fun alternative to classic stuffing is to top with Vegetarian Chilli and cheddar cheese.
Ingredients:
- 4 Russet Potatoes
- 4 tbsps of Olive Oil
- Finishing Salt
Instructions:
- Preheat oven to 425 ° F
- Scrub potatoes well
- Rub olive oil all over potatoes
- Poke each potato with a fork 4-5 times on all sides
- Place potato on baking sheet and bake for 50-60 minutes depending on size of potato
- Check potatoes are done by testing with a fork for tenderness
- Once out of the oven sprinkle with finishing salt
- Slice open lengthwise and then using silicone baking mitts or a tea towel squish potato from end to end to open
- Stuff and enjoy!
