Spaghetti Carbonara is the comfort dish we all need in our lives once in awhile. Hopcott's Chopped Bacon is the perfect amount to create this heavenly dish for two.
Ingredients:

1 pack of Hopcott's chopped bacon (do an additional chop for a smaller bite if preferred!).
- 200 grams of spaghetti
- 2 large egg yolks
- 1/2 cup of pecorino or parmesan whatever you prefer!
- Freshly ground black pepper
- Salt for the pasta water
Instructions:
- In a bowl, whisk the egg yolks with the grated cheese and a generous amount of freshly cracked pepper.
- Boil a large pot of salted water and and cook the pasta to package instructions. Reserve about 1 cup of pasta water, and drain pasta.
- Cook the bacon in a skillet over medium heat, and cook down until the fat renders and the bacon becomes crispy.
- Add the hot drained spaghetti to the skillet with the bacon and rendered fat, and toss well to coat the pasta.
- Remove skillet from direct heat and wait 30 seconds, then stir in the egg and cheese mixture.
- Quickly toss the pasta and add a splashes of pasta water as needed until a creamy sauce forms (the residual heat cooks the eggs without scrambling them!).
- Plate the pasta and sprinkle with extra cheese and finely cracked pepper.
- Serve immediately and enjoy!
Tip: Option to throw in fresh peas with the pasta at the last 30 seconds of cook time for a fresh little pop!
