Spaghetti Carbonara

Spaghetti Carbonara is the comfort dish we all need in our lives once in awhile. Hopcott's Chopped Bacon is the perfect amount to create this heavenly dish for two.  

Ingredients:

  • 1 pack of Hopcott's chopped bacon (do an additional chop for a smaller bite if preferred!). 
  • 200 grams of spaghetti 
  • 2 large egg yolks 
  • 1/2 cup of pecorino or parmesan whatever you prefer!
  • Freshly ground black pepper 
  • Salt for the pasta water 

Instructions:

  1.  In a bowl, whisk the egg yolks with the grated cheese and a generous amount of freshly cracked pepper.
  2.  Boil a large pot of salted water and and cook the pasta to package instructions. Reserve about 1 cup of pasta water, and drain pasta.
  3. Cook the bacon in a skillet over medium heat, and cook down until the fat renders and the bacon becomes crispy. 
  4. Add the hot drained spaghetti to the skillet with the bacon and rendered fat, and toss well to coat the pasta. 
  5. Remove skillet from direct heat and wait 30 seconds, then stir in the egg and cheese mixture.
  6. Quickly toss the pasta and add a splashes of pasta water as needed until a creamy sauce forms (the residual heat cooks the eggs without scrambling them!). 
  7. Plate the pasta and sprinkle with extra cheese and finely cracked pepper.
  8. Serve immediately and enjoy! 

 

Tip: Option to throw in fresh peas with the pasta at the last 30 seconds of cook time for a fresh little pop!
