Candied Strawberries

Making candy doesn't have to be intimidating. As long as you have a thermometer, you'll be good to go. These are so delicate, they look as though they've been dipped in glass! Crunchy, sweet, and jammy, they're perfect for your next soirée!

Ingredients:

  • 1 lbs of fresh strawberries
  • 2 cups granulated sugar
  • 1/2 cup of water
  • 1/2 cup light corn syrup


Instructions:

  1. Wash the strawberries throughly and pat until completely dry using a paper towel. If they're even a little bit wet the sugar won't stick. Insert a skewer or toothpick into the top of each berry.
  2. In a medium saucepan combine the sugar water and corn syrup and hear over medium to high heat. Do not stir after the sugar dissolves to avoid crystallization.
  3. Cook the mixture until it reaches 300°F using a thermometer. If you don't have a thermometer, drop a spooinful of syrup into a bowl of ice water if it hardens into a brittle consistency it's ready! 
  4. Remove the pot from the heat and dip the skewered strawberries in the hot sugar, twirling to coat them completely. Let the excess drip off. 
  5. Place the dipped strawberries onto a baking sheet lined with parchment or a silicone mat. The candy shell will harden in 5-10 minutes!

 

Tip: Candied strawberries are best enjoyed within 1-4 hours!
