Making candy doesn't have to be intimidating. As long as you have a thermometer, you'll be good to go. These are so delicate, they look as though they've been dipped in glass! Crunchy, sweet, and jammy, they're perfect for your next soirée!
Ingredients:
- 1 lbs of fresh strawberries
- 2 cups granulated sugar
- 1/2 cup of water
- 1/2 cup light corn syrup
Instructions:
- Wash the strawberries throughly and pat until completely dry using a paper towel. If they're even a little bit wet the sugar won't stick. Insert a skewer or toothpick into the top of each berry.
- In a medium saucepan combine the sugar water and corn syrup and hear over medium to high heat. Do not stir after the sugar dissolves to avoid crystallization.
- Cook the mixture until it reaches 300°F using a thermometer. If you don't have a thermometer, drop a spooinful of syrup into a bowl of ice water if it hardens into a brittle consistency it's ready!
- Remove the pot from the heat and dip the skewered strawberries in the hot sugar, twirling to coat them completely. Let the excess drip off.
- Place the dipped strawberries onto a baking sheet lined with parchment or a silicone mat. The candy shell will harden in 5-10 minutes!
Tip: Candied strawberries are best enjoyed within 1-4 hours!
