This recipe combines the earthy flavor of asparagus with the savory richness of prosciutto, creating a crowd-pleasing appetizer or side dish that's perfect for spring gatherings.
Ingredients:
-
1 bunch of fresh asparagus
-
6-8 slices of prosciutto
-
Olive oil
-
Balsamic glaze (optional)
-
Salt and pepper to taste
Instructions:
- Wash the asparagus spears and trim off the tough ends.
- Bring a pot of salted water to a boil. Add the asparagus spears and cook for 1-2 minutes, until just tender but still crisp. Remove the asparagus from the boiling water and immediately plunge them into a bowl of ice water to stop the cooking process. Drain and pat dry with paper towels.
- Take a slice of prosciutto and lay it flat on a cutting board. Place 3-4 asparagus spears at one end of the prosciutto slice and roll them up tightly, wrapping the prosciutto around the asparagus. Repeat with the remaining asparagus and prosciutto slices.
- Heat a drizzle of olive oil in a skillet over medium heat. Place the asparagus bundles seam-side down in the skillet and cook for 2-3 minutes on each side, until the prosciutto is crispy and slightly caramelized.
- Transfer the cooked bundles to a serving platter and season with salt and pepper to taste. Drizzle with balsamic glaze, if desired, for an extra burst of flavor. Make sure to eat these while they're warm!
