A hearty version of Tokyo-style soy sauce ramen with tender chashu, bamboo, and nori. Adapted from our restaurant's classic Shoyu ramen recipe. All frozen into one convenient puck — just heat and eat.

Wheat flour, water, whole egg powder, sea salt, kansui (sodium carbonate, potassium carbonate), corn starch, riboflavin. SOUP: Water, whole chicken, fish, kelp, soy sauce (water, soybeans, wheat, salt, koji (aspergillus oryzae)), sake (water, rice, koji), hon mirin (water, alcohol, rice, koji), garlic, ginger, green onion. TOPPINGS: Pork, green onions, bamboo, seaweed, soy sauce, sugar, sake, hon mirin, canola oil, sesame oil. Contains: Wheat, egg, fish, soy, sesame.

Greg Masuda is a third-generation Japanese Canadian whose family first settled on Vancouver Island nearly a century ago. With roots in forestry, his heritage is deeply connected to the Island and its natural gifts. The Masuda family was part of the World War II internment of Japanese Canadians. They were forcibly removed from their homes and made to labour on sugar beet farms in southern Alberta. In 2016, Greg founded Nikkei Ramen-ya with a mission to create honest, high-quality food while honouring his family, culture, and values. Alongside his wife Erin and their four children, he continues to grow the business as a family-owned operation — committed to quality, community, and authenticity.
