White Chocolate Nut Cookies

These cookies are a true crowd-pleaser—we made two trays, and they were gone in under 10 hours! The brown butter adds a rich, caramel-like sweetness that really hits the spot, making this recipe taste like it came straight from a gourmet café. We used macadamia nuts in the photo, but pecans, walnuts, almonds, pistachios, or hazelnuts would all work beautifully.

Ingredients:
  • 1 cup unsalted butter, browned
  • 1 cup brown sugar
  • ½ cup granulated sugar
  • 2 teaspoon pure vanilla extract
  • 2 large eggs, room temperature
  • 2½ cups all-purpose flour
  • 2 teaspoons cornstarch
  • ¾ teaspoon salt
  • 1 teaspoon baking soda
  • 1 cup white chocolate chips
  • 1 cup chopped nuts (lightly toasted) 

Instructions:

  1. In a small sauce pan, melt the butter over medium heat, until the butter begins to foam, 3 to 4 minutes. Remove from heat and pour in to a large mixing bowl and allow to cool for at least 15 minutes.
  2. In a medium bowl combine dry ingredients: the flour, corn starch, salt and baking soda. Set aside.
  3. In a bowl beat the butter and sugars together until light and fluffy, 2 to 3 minutes. 
    Add in the vanilla, and eggs and continue mixing until combined and creamy.
  4. Gradually add flour mixture to butter mixture, mixing just until combined. Do not over mix
  5. Fold in or stir in white chocolate chunks or chocolate chips and macadamia nuts with wooden spoon or rubber spatula.
  6. Refrigerate dough for at least 30 minutes
  7. Once ready to bake preheat oven to 350°F and line baking sheet with parchment paper or silicone baking mat and set aside.
  8. As the oven preheats, scoop and roll dough into balls. Arrange 2-3 inches apart on the baking sheets, you can flatten slightly on pan.
  9. Bake for 10-12 minutes or until lightly browned around the edges. The centers will still look soft.
  10. Allow the cookies to cool for 5 minutes on the baking sheet / cookie sheet as they will still be soft, then carefully transfer them to a wire rack to cool completely. and enjoy! 

Tip: Press in a few extra white chocolate chips into the cookies as they are still warm for extra deliciousness!
