Stove Top Zucchini Hummus

Creamy, smoky, and packed with summer flavours, this zucchini hummus is a new spin  on the classic. It’s a delicious way to sneak some greens into your day—your kids might not even notice! 

 

Ingredients:

  • 1–2 zucchinis, halved and scored (depending on the size)
  • Juice of one lemon
  • 2 peeled cloves of garlic 
  • Salt to taste
  • 1/2 cup olive oil 
  • 1/4 cup nuts or omit for 2–3 tbsp tahini
  • Chili flakes (optional)
  • Optional: Splash of sesame oil for finishing


    Instructions:

    1. Cut and score zucchini
    2. Roast cut side down in a pan for 10-15 minutes 
    3. Sauté garlic until fragrant 
    4. Blend everything but the sesame oil in a blender or food procesor 
    5. Finish with sesame oil 
    6. Cool in fridge and serve

     

     

    Serve with your favourite crackers, on-top of your next falafel bowl, or spread it on your next sandwich. Incredibly versatile, the uses for this spread are endless!
