Creamy, smoky, and packed with summer flavours, this zucchini hummus is a new spin on the classic. It’s a delicious way to sneak some greens into your day—your kids might not even notice!
Ingredients:
- 1–2 zucchinis, halved and scored (depending on the size)

Juice of one lemon
- 2 peeled cloves of garlic
- Salt to taste
- 1/2 cup olive oil
- 1/4 cup nuts or omit for 2–3 tbsp tahini
- Chili flakes (optional)
- Optional: Splash of sesame oil for finishing
Instructions:
- Cut and score zucchini
- Roast cut side down in a pan for 10-15 minutes
- Sauté garlic until fragrant
- Blend everything but the sesame oil in a blender or food procesor
- Finish with sesame oil
- Cool in fridge and serve
Serve with your favourite crackers, on-top of your next falafel bowl, or spread it on your next sandwich. Incredibly versatile, the uses for this spread are endless!
