Simple Kale Salad with Panko and Parm

Kale can be grown almost year round and is a nutritious way to enjoy local produce in a variety of seasons. 

We love this recipe because it is super simple and has an added crunch with the toasted panko. The parm and lemon zest makes it extra delicious!

Ingredients:

  • 1 bunch of Kale

  • 1 cup of freshly grated parm

  • 2/3 cup of panko

  • 1 lemon (for zest and juice)

  • 2 tbsp of olive oil

  • 1 tsp of garlic powder

  • 1/4 tsp of salt


Instructions:

  • Dry roast panko, garlic powder, lemon zest & salt until panko is a medium brown. Set aside to cool.

  • Chop kale, finely removing thick parts of stocks.

  • Add olive oil to kale and massage.

  • Add grated parmesan cheese and lemon juice and then mix.

  • Top with toasted panko mixture and serve!
