All we can say about this recipe is OBSESSED! It’s taken every ounce of self-control not to make these every night of the week. A new rotation meal for sure, perfect for dinner or a party appy. Super easy, ridiculously good, and a great way to use up that delicata squash sitting on your counter!
Ingredients:
- 2 Delicata Squash
- 4 Sausages
- Savoury spice blend
- Parmesan or Pecorino
- Olive oil, salt & pepper
- Sage Leaves
Instructions:
- Preheat the oven to 400°F and line two sheet pans with parchment.
- Slice the delicata into even sized rounds and scoop out the inside. Toss with olive oil, salt, pepper and some savoury spices.
- Grate parmesan and place in evenly spaced mounds on your sheet tray. Top the mounds with your squash rings so the cheese fills the center.
- Fill rings with your sausage, sprinkle with more grated cheese and press a sage leaf into each ring.
- Bake for 20-25 minutes until the squash is tender and the sausage has browned. Let cool for a few minutes if your stomach can manage!
Tip: As the sausage cooks it will release a lot of fat and shrink from the edges of the squash. Make sure to press the sausage down and leave no gaps when filling the squash rings.
