With a jar of Karen's tomato sauce, anything is possible! Add some creamy butter beans, roasted zucchini, and a tangy herb-packed yogurt sauce, it's simple and impressive.
Ingredients:
- 4 medium zucchinis cut into strips
- 1 Jar of Karen's homemade tomato sauce (or your favourite simple tomato sauce)
- Olive oil
- Salt and pepper to taste
- 2 garlic cloves minced
- 1 torpedo onion

1 can of butter beans (or any bean) drained and rinsed
- 1 tsp of greek spice mix
- 1/2 cup plain yogurt
- 1 tbsp mayonnaise
- 1 tbsp fresh parsley finely chopped
- 1 tsp lemon zest
- 1 tbsp lemon juice
Instructions:
- Roast the zucchini on the BBQ drizzled with olive oil, salt and pepper for about 15 minutes.
- In a medium saucepan heat the olive oil over medium heat. Add the minced garlic and sliced onions and cook for 2-3 minutes until fragrant and soft. Then add the beans and spice mix stirring frequently. Finally, add the jar of tomato sauce then turn down heat to keep warm.
- In a small bowl combine the yogurt, mayonnaise, parsley, lemon juice and zest, and stir until smooth. Season with salt and pepper to taste.
- Assemble the dish by spreading a layer of the yogurt sauce, then a huge scoop of the tomato sauce on top. Finish with the roasted zucchini and a crack of fresh pepper. Garnish with extra parsley and enjoy!
Tip: This dish is perfect on it's own, but if you need some carbs serve with warm crusty bed or atop of basmati rice.
