Roasted Cabbage Wedges

Roasting cabbage transforms it from a humble vegetable into something truly special. The high heat caramelizes the edges, bringing out its natural sweetness. This dish is simple yet elegant, perfect as a side for roasted meats, grain bowls, or even as a hearty vegetarian main with a fried egg on top.

Ingredients

  • 1 small green cabbage (or ½ a large cabbage), cut into 6-8 wedges
  • 3 tbsp olive oil
  • 3 cloves garlic , minced
  • ½ tsp salt
  • ½ tsp black pepper
  • ½ tsp smoked paprika (optional, for a hint of smokiness)
  • ¼ cup grated Parmesan cheese
  • 2 tbsp chopped fresh parsley (for garnish)
  • Lemon wedges (for serving, optional)

Instructions

Preheat the oven:

  • Set your oven to 400°F. Line a baking sheet with parchment paper for easy cleanup.

Prepare the cabbage:

  • Slice the cabbage into wedges, keeping the core intact so they hold their shape.
  • In a small bowl, mix the olive oil, minced garlic, salt, pepper, and smoked paprika. Brush or drizzle the mixture over the cabbage wedges, ensuring they are well-coated.

Roast:

  • Arrange the cabbage wedges cut-side down on the baking sheet. Roast for 20 minutes, then carefully flip them and roast for another 15-20 minutes, until the edges are crispy and golden brown.

Add the Parmesan:

  • Sprinkle the grated Parmesan over the hot cabbage and return to the oven for 5 more minutes, just until the cheese melts and turns slightly golden.

Finish & serve:

  • Garnish with fresh parsley and serve warm with a squeeze of lemon for extra brightness.
