Plum & Pear Fruit Leather

Fruit leather takes patience. With an 8-10 hour cook time, we like to start this project in the evening before bed. Set your oven to 140, pop your puree in and when you wakeup in the morning a delicious snack will be waiting for you!

Ingredients:

  • Fresh fruit (in this case pears and plums)
  • Water
  • Lemon juice
  • Sugar

Instructions:

  1.  Prepare the fruit by rinsing, peeling, coring/pitting, and slice.
  2. In a large sauce pan or dutch oven add fruit and water (for every 4 cups of chopped fruit, and 1/2 cup of water.
  3. Bring to a simmer, cover, and then let cook on low for 15 minutes or until the fruit is cooked through.
  4.  Uncover, stir and use a masher to get a smoother consistency. 
  5. Taste to determine how much sugar and lemon juice to add. If the fruit is very sweet you may not need much. Start with 1 teaspoon of each at a time and keep tasting until you've reached a desired flavour. 
  6. Continue to simmer and stir until sugar is completely dissolved and the fruit has thickened. 
  7. Add the mashed fruit to a blender to make it extra smooth, then pour on top of a parchment lined baking sheet. The puree should be About 1/4 inch thick.
  8. Preheat oven to 140, and place the baking sheet in the oven. If you have a convection oven setting use this as it will speed up the process. Let the puree dry in the oven for as long as it takes until it fully dries out into leather. It can take up to 8-12 hours, so this is a great project to make before bed. 
  9. The fruit leather is ready when it is no longer sticky!

Tip: If stored in a sealed container in the fridge it will stay fresh for months, but the probability of it lasting that long without being eaten is slim!
