This creamy, zesty dressing is perfect for drizzling over roasted vegetables, salads, or grain bowls. Made with simple, wholesome ingredients, it’s as versatile as it is delicious!
Ingredients:
- 1 cup sesame seeds (optional, for added texture)
- 4 tbsp olive oil
- 2 tbsp fresh lemon juice (about half a lemon)
- 1 clove garlic, minced or grated
- ¼ tsp salt (or to taste)
- A pinch of black pepper
- 2-3 tbsp water (to thin, as needed)
Instructions:
- Blend or Whisk: In a food processor or blender, combine the sesame seeds, olive oil, lemon juice, garlic, salt, and pepper. Whisk or blend until smooth.
- Adjust Consistency: Gradually add water, one tablespoon at a time, until the dressing reaches your desired consistency. It should be creamy yet pourable.
- Taste and Adjust: Adjust salt, lemon juice, or garlic to your preference.
Serving Suggestions:
- Drizzle over roasted cauliflower (like in the recipe above!).
- Use as a dip for fresh veggies or pita bread.
- Toss with greens, grains, or roasted chickpeas for a flavourful salad.
If you don't have a food processor or powerful blender, use 2 tbsp olive oil and prepared tahini instead of sesame seeds.
Store leftovers in an airtight container in the fridge for up to 5 days. Stir or shake well before using, as it may thicken when chilled.
