Lemon Tahini Dressing

This creamy, zesty dressing is perfect for drizzling over roasted vegetables, salads, or grain bowls. Made with simple, wholesome ingredients, it’s as versatile as it is delicious!

Ingredients:

  • 1 cup sesame seeds (optional, for added texture)
  • 4 tbsp olive oil
  • 2 tbsp fresh lemon juice (about half a lemon)
  • 1 clove garlic, minced or grated
  • ¼ tsp salt (or to taste)
  • A pinch of black pepper
  • 2-3 tbsp water (to thin, as needed)

Instructions:

  1. Blend or Whisk: In a food processor or blender, combine the sesame seeds, olive oil, lemon juice, garlic, salt, and pepper. Whisk or blend until smooth. 
  2. Adjust Consistency: Gradually add water, one tablespoon at a time, until the dressing reaches your desired consistency. It should be creamy yet pourable.
  3. Taste and Adjust: Adjust salt, lemon juice, or garlic to your preference.

Serving Suggestions:

  • Drizzle over roasted cauliflower (like in the recipe above!).
  • Use as a dip for fresh veggies or pita bread.
  • Toss with greens, grains, or roasted chickpeas for a flavourful salad.

If you don't have a food processor or powerful blender, use 2 tbsp olive oil and prepared tahini instead of sesame seeds. 
Store leftovers in an airtight container in the fridge for up to 5 days. Stir or shake well before using, as it may thicken when chilled.
