A go-to recipe for sneaking veggies into the kids! With 3 cups of zucchini, these chocolate muffins (or loaf) are so moist and chocolatey, you’d never guess they’re packed with veggies. Perfect for a sweet treat that’s secretly healthy!
Ingredients:
- 4 eggs room temp
- 1 cup brown sugar
- 1 cup white sugar
- 1 tsp baking soda
- 1 1/2 tsp baking powder
- 1 cup chocolate chips
- 1 cup cocoa powder
- 1 cup neutral oil
- 3 cups grated zucchini
- 2 cups of flour
Instructions:
- Preheat oven to 350
- Mix all wet ingredients in a large mixing bowl, then add the dry.
- Pour into lined muffin tins, a loaf pan, or 9x9 cake pan.
- Bake for 15 minutes and then turn, bake for an additional 15 minutes. Should be golden on top. If using a loaf pan bake for an additional 20 minutes, and cake pan an additional 10 minutes!
- Let cool and enjoy!
Tip: Can be made in a loaf, or cake pan as well!
