Kasia's Chocolate Zucchini Muffins

A go-to recipe for sneaking veggies into the kids! With 3 cups of zucchini, these chocolate muffins (or loaf) are so moist and chocolatey, you’d never guess they’re packed with veggies. Perfect for a sweet treat that’s secretly healthy!

Ingredients:

  • 4 eggs room temp
  • 1 cup brown sugar
  • 1 cup white sugar 
  • 1 tsp baking soda 
  • 1 1/2 tsp baking powder
  • 1 cup chocolate chips 
  • 1 cup cocoa powder
  • 1 cup neutral oil 
  • 3 cups grated zucchini 
  • 2 cups of flour 

Instructions:

  1.  Preheat oven to 350
  2.  Mix all wet ingredients in a large mixing bowl, then add the dry.
  3. Pour into lined muffin tins, a loaf pan, or 9x9 cake pan. 
  4. Bake for 15 minutes and then turn, bake for an additional 15 minutes. Should be golden on top. If using a loaf pan bake for an additional 20 minutes, and cake pan an additional 10 minutes!
  5. Let cool and enjoy!

 

Tip: Can be made in a loaf, or cake pan as well!
