Homemade Berry Freezies

Cool off the TUCG way with these natural fruity freezies made from real berries by our amazing in house Chef Lise!

Ingredients

  • 3 cups of any fresh berries or fruit (strawberries, blueberries, raspberries, blackberries, even Rhubarb or a mix!)
  • 1 heaping cup of can sugar 
  • Juice of ½ a lemon
  • 1 cup of water

Instructions:

  1. In a large bowl, combine the berries with can sugar. Toss well to coat, and let the mixture soak in the fridge overnight. This draws out the juices and starts breaking the berries down.
  2. The next day add the lemon juice to the berry mixture and stir to combine.
  3. Soften and strain (if needed). The berries should be soft and juicy. If you're using berries with a lot of seeds, you may want to strain the mix through a fine mesh sieve for a smoother texture. 
  4. Add one cup of water to the mixture and blend until completely smooth.
  5. Pour and freeze into freezer safe bags, or popsicle/freezie molds. Freeze until solid. About 4-6 hours or overnight!

Tip: you can add fresh herbs like mint or basil for a twist!
