The gooseberries provide a tangy juicy burst of flavour, making them a great way to spice up this classic summer side dish.
Ingredients:
- 2 cups of Green goosberries halved or quartered
- 4 cups of arugula
- 1/2 cup crumbled goat cheese
- 1/4 cup toasted walnuts
- 1 small red onion thinly sliced
- 1/2 cucumber sliced
- 1 tablespoon olive oil
- 1 tablespoon balsamic vinegar or apple cider vinegar
- 1 teaspoon honey
- Salt & pepper
- fresh herbs (optional)
Instructions:
- wash and cut your gooseberries. If they're very tart you can sprinkle a little sugar over top to mellow the sharpness.
- Toast the chopped walnuts in a dry pan for 3-4 minutes or until fragrant and lightly brown. Keep the pan moving because these can burn quick!
- Make the dressing by mixing the oil, balsamic, honey, salt and pepper in a mason jar or small bowl.
- In a large bowl toss together the onions, arugula and cucumber slices. Add the gooseberries, crumbled cheese and toasted walnuts. Finish with a drizzle of the dressing on top and toss again lightly.
- Garnish with your choice of fresh herbs and serve immediately!
