If you haven't tried Chayote, here is the recipe to inspire you! We recommend serving with a side of rice and your protein of choice.
Ingredients:
- 1 chayote
- 2 carrots
- 5-6 fresh shiitake mushroom sliced
- 1 tsp salt , plus more
- 1 tbsp oil
- 1 fresh red chili, or 1/2 tsp of chili oil
- 1 clove garlic, minced
- 2 tbsp water
- 1 tbsp of miso paste
- 2 tsp soy sauce
- 1-2 tsp honey
- 1 small bunch of cilantro
- 2 green onion, chopped (optional)
- 2 tsp toasted sesame seeds (optional)
Instructions:
- Peel chayote and carrots using a potato peeler. Slice chayote thinly around the pit. Julienne chayote.
- Sprinkle 1 teaspoon salt over chayote and rub them very well. Rinse out and set aside. Julienne carrots.
- Heat oil in a skillet over medium heat. Add red chili and garlic and cook until fragrant.
- Add the chayote and a pinch of salt; cook for 2-3 minutes until chayote gets somewhat soft.
- Add the mushroom and stir. Add water to create the steam, add miso and honey and continue to stir.
- Drizzle soy sauce and green onion; toss well. Season with more salt according to your taste. Serve and top with sesame seeds.
