Soft, fluffy and tasting like something straight from a fall fair! These cinnamon apple pancake rings are borderline too much sugar for breakfast… but why the heck not?! Rolled in cinnamon sugar while they’re still warm, they’re the ultimate treat and your new special-occasion go-to!
Ingredients:
- 3 apples
- 1 serving of your True Grain pancake mix, prepared according to package instructions
- 2–3 tbsp sugar
- 1 tsp cinnamon
- Butter or oil, for cooking
Instructions:
- Core the apples and slice them into rings about ¼-inch thick.
- Mix the sugar and cinnamon together in a shallow bowl and set aside.
- Mix your pancake batter according to the package instructions, and coat each apple ring in pancake batter, letting any excess drip off.
- Heat a lightly buttered or oiled pan over medium heat. Cook the apple rings for 2–3 minutes per side, until the pancake batter is golden brown and cooked through and the apples have softened slightly.
- While still warm, roll each pancake ring in the cinnamon sugar until coated.
Tip: Add a little extra butter in the pan once the little rings have finished cooking, this way the cinnamon sugar mix will stick better!
