We’re calling this one the Very TUCG Breakfast because it’s the exact breakfast we served up at the Ukee Days Pancake Breakfast! A little bit of everything we love — local sausages, True Grain fluffy pancakes, and summer berries cooked down into a sweet compote. The kind of breakfast that makes you want to stay in your cozies and linger a little longer.
Ingredients:
- 2 cups of berries
- 2 tbsp maple syrup
- 1 1/2 cups of True Grain Pancake mix (Makes 10-12 pancakes per batch!)
- 1 egg
- 2 tbsp vegetable oil

1 1/2 cups of milk
- Sausages
Instructions:
- Add berries and maple syrup to a small saucepan over medium heat.
Let the berries gently cook down for 10–15 minutes, stirring occasionally, until they become soft, juicy, and syrupy (Let cool slightly before serving. The compote will thicken as it cools). - In a large bowl, whisk together the pancake mix, egg, oil, and milk until just combined. A few small lumps are okay — don’t overmix!
- Let the batter rest for 5 minutes while your pan heats up.
- Cook pancakes on a lightly greased pan over medium heat, flipping once bubbles begin to form on the surface.
