Cherry Cobbler

When cherry season comes around it can be easy to just see cherries as a easy snack. We're here to advocate for making some cherries into a lovely cobbler!

Ingredients:

  • 4 cups fresh cherries, pitted and halved
  • 1/2 cup of butter 
  • 1-1/2 cup of all-purpose flour
  • 3/4 cup sugar
  • 2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1-1/2 cups whole milk (or dairy free milk of choice)
  • 2 teaspoons of pure vanilla extract

Instructions:

  • Preheat the oven to 350°F. 
  • Melt butter 
  • In a large bowl whisk the flour, sugar, baking powder, and salt together. 
  • Add the milk, vanilla, and almond extract and whisk until batter is smooth.
  • Add melted butter to 2.5 quart baking pan and spread evenly.
  • Spread the cherries over the melted butter in a layer. 
  • Pour the batter over the top of the cherries. 
  • Bake for 55–60 minutes until toothpick comes out relatively clean (some crumbs are ok).
  • If cobbler is becoming too brown, cover with aluminum foil or a baking sheet for remainder of baking time.
  • Once removed from the oven, let cool 5-10 minutes.
  • Serve with Chocolate Tofino ice cream!
