When cherry season comes around it can be easy to just see cherries as a easy snack. We're here to advocate for making some cherries into a lovely cobbler!
Ingredients:
- 4 cups fresh cherries, pitted and halved
- 1/2 cup of butter
- 1-1/2 cup of all-purpose flour
- 3/4 cup sugar
- 2 teaspoon baking powder
- 1/2 teaspoon salt
- 1-1/2 cups whole milk (or dairy free milk of choice)
- 2 teaspoons of pure vanilla extract
Instructions:
- Preheat the oven to 350°F.
- Melt butter
- In a large bowl whisk the flour, sugar, baking powder, and salt together.
- Add the milk, vanilla, and almond extract and whisk until batter is smooth.
- Add melted butter to 2.5 quart baking pan and spread evenly.
- Spread the cherries over the melted butter in a layer.
- Pour the batter over the top of the cherries.
- Bake for 55–60 minutes until toothpick comes out relatively clean (some crumbs are ok).
- If cobbler is becoming too brown, cover with aluminum foil or a baking sheet for remainder of baking time.
- Once removed from the oven, let cool 5-10 minutes.
- Serve with Chocolate Tofino ice cream!
